Cat5e:
CAt5e has a maximum frequency of 100MHz. CAT5e cables are typically used for standard VoIP and data transmission.

Cat6:
CAT6 is backwards compatible with CAT5 and CAT5e standards. Ethernet data rates of up to 1 gigabit per second. CAT6 cables can also accommodate 10 Gigabit Ethernet connections for a limited distance of about 55 meters. CAT6a can do 10 gigiabit per second. 

Cat7:
Proprietary cable that is not often used do to not being anofficial standard. 

Cat8:
Cat8 is the fastest over short distances: 40 Gbps up to 78’ and 25 Gbps up to 100’. If going longer distances just use CAt6a.
